Hash Brown Quiche

1 pkg “Simply Potatoes” hash browns 6 T. melted butter ½ lb. bacon, chopped ½ small yellow onion, finely chopped 1 roma tomato, small diced 2 cups shredded cheese 5 eggs dash of “Tapatio” hot saucePress hash browns into bottom and up sides of 10” deep dish pie pan. Melt butter and pour evenly over all. Bake at 450 degrees for 30 minutes.Meanwhile, fry bacon and onion until crisp and drain on paper towels. In small bowl, beat eggs with hot sauce.Remove hash browns from oven. Reduce heat to 350. Layer bacon mixture, diced tomato and shredded cheese over hash browns. Pour eggs evenly over all. Return to oven and bake for 30 minutes.Serves 6.
