Dorothy's Rhubarb Crunch

I got this recipe from my neighbor Dorothy. It is hands down the best rhubarb crunch I have ever had, and our guests just love it!

1 1/2 cups all purpose flour
1/2 cup powdered sugar
3/4 cup butter

3 eggs
2 1/2 cups sugar
1/3 cup all purpose flour
1 1/4 teaspoons baking powder
3 - 4 cups fresh chopped rhubarb

Preheat oven to 350 degrees. In a large bowl, combine 1 1/2 cups flour and powdered sugar. Cut butter into small pieces and cut into flour combination using a pastry blender. Spray a 9 x 13" baking pan with cooking spray and press flour combination into bottom, pressing slightly to form a crust. Bake for 15 minutes. Meanwhile, using the same bowl, beat eggs until fluffy , then add sugar and beat until well combined. Sift 1/3 cup flour with baking powder over top of egg mixture and beat until well combined and thick. Stir in cut up rhubarb. When crust has baked for 15 mintues, remove from oven and pour egg mixture evenly over crust. Return to oven and bake additional 35 minutes.
