Apricot Scones

1 1/2 cups all purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3 Tablespoons sugar plus more for sprinkling
6 Tablespoons unsalted butter
1/2 cup chopped Turkish apricots
1/2 cup buttermilk
1 egg white


In large mixing bowl, stir together flour, baking powder, soda, salt and sugar. Cut in butter with pastry cutter until butter is about the size of small peas. Stir in chopped apricots. Pour buttermilk in all at once and stir quickly until it forms a ball. Knead a couple of times just to incorporate all of the flour.

On a floured surface, pat dough into a 4 by 8 inch rectangle. Cut into eight 2 inch squares, then each square diagonally into a triangle. Transfer to oiled sheet pan, leaving space between them.

Beat egg white with a teaspoon of water. Brush on tops of scones. Sprinkle with sugar. Bake for 12 minutes at 450 degrees. Cool on wire rack before serving.

Recipe doubles nicely so you can share with the neighbors.
